The Big Al’s Chicken Shack journey started back in 2020, in the midst of the pandemic. My staff at Island Time were discussing our local restaurants and what we felt we were missing. We realized we all needed some good southern comfort food, as our usual options of pizza, seafood, and burgers were getting old. There were rumors buzzing around that a popular fried chicken franchise would be making it’s way to Amelia Island and people seemed to be looking forward to it. However, I thought, “why settle for another franchise?” The gears started turning, I got the idea that one day I’d open my own fried chicken restaurant and we could do it better than a chain could.

Flash forward to 2021 and the opportunity presented itself- I could really open this restaurant. We decided on some staple menu items and the Island Time manager made us up a logo. With the support and hard work of my Island Time team, we got the Big Al’s location cleaned up and organized. By October, we were ready to open our doors!

Now in 2023 our goal is just the same- serve up fresh, delicious southern fried chicken and comfort foods. Big Al’s staff puts the work in every day to make delicious food from scratch.  Boiling and mashing potatoes. Preparing our very own chicken gravy. Marinating fresh chicken in our special blend of spices before hand-breading and frying it to perfection. Melting a blend of cheeses for our creamy mac & cheese sauce. Firing up the smoker for juicy hickory smoked wings.

We even blend up our own amazing sauces that we use for wings, sandwiches, and dipping! Everybody can appreciate a good sauce list. Shack sauce is our signature sauce- comparable to a honey mustard. Asian fusion sauce is a combination of Japanese and Korean BBQ sauces. We make our own buffalo, extra hot buffalo, and atomic sauces. Atomic buffalo sauce is a concoction of cayenne, jalapeno, habanero, and chipotle peppers. For our decadent hot honey- we simmer jalapenos, habaneros, and chili flakes in large batches of golden honey before straining and serving. It’s a sweet and spicy treat; perfect for drizzling on chicken, biscuits, and waffles alike.
